Milk Steaming Basics: From Bubbles to Microfoam

Two phases and a thermometer you already own

Café microfoam — that glossy, paint-like milk that pours art and sweetens a latte — is not a talent. It's a two-phase technique performed with attention: stretch (introduce air, briefly) then spin (integrate it into a vortex), stopped at a temperature your hand learns in a week. Every machine with a steam wand can produce it within its tier's limits; this page is the technique, the machine realities, and the fastest practice path.

Phase 1: Stretch — air in, early and briefly

Cold milk in the pitcher (a third full — it expands), wand tip just below the surface, slightly off-center, full steam. The goal of the first seconds is controlled air intake: a gentle, rhythmic paper-tearing soundtss-tss — as the surface sips air. This is where volume is born: a few seconds of stretching for flat-white texture, a couple more for latte, more again for a classic cappuccino. The classic failures both live here: tip too high (loud sputtering, big soap bubbles) or stretching too long and too late (foam that's grown after the milk is already warm — bubbles with no time left to integrate).

Rule of thumb: all stretching happens while the milk is still cool. Air added past warm never integrates.

Phase 2: Spin — the vortex does the polishing

Sink the tip slightly deeper and angle the pitcher so the milk whirlpools. The vortex is the texturizer: it shears the big bubbles into micro ones and folds the foam through the liquid until the whole pitcher is one glossy phase. No more air enters — just spinning and heating together. Hold the whirlpool until temperature says stop.

Temperature, by hand: when the pitcher's side becomes just too hot to hold comfortably — that's the stop, around the standard 55–65°C. Past it, milk's sweetness scalds away (and the foam coarsens); under it, lattes drink lukewarm. The hand calibrates in a week of pours; a clip thermometer can train it faster, then retire.

Finish: tap the pitcher on the counter (pops strays), swirl until glossy, pour immediately — microfoam waits for no one.
